Andhra Mutton Biryani

Biriyani is nothing but just a state of happiness !!

Biriyani is not just food its a complete wholesome meal !!

This dish is easy as it can be considered as one pot cooking and also it satisfies the taste buds which gives one immense pleasure as one relishes each and every mouthfull.It is a spectacular delicacy which would exist at any and every special occasion. Also the blend of spices and meat is easy on the stomach.




Cooking Time :25 min

Ingredients :

Mutton ½ kg

Rice 1 cup

Cinnamon 1’

Bay leaf 2

Cardamom 2-3

Star aniseed 1-2

Mace 1-2

Kalpasi 2

Green chilly 2-3

Red chilly 2

Big onions 2-3 (sliced)

Tomatoes 2 ( sliced )

Curds 3-4 tbsp

Turmeric ¼ tsp

Salt to taste

Lime juice 1 tbsp

Oil & ghee 2 -3 tbsp

Grind to paste :

Green chilly 3-4

Ginger ¾ ‘

Garlic 8-9

Small onion 10 no

Cinnamon 2-3’

Poppy seeds ½ tsp

Cardamom 2-3

Mint leaves a handful

Coriander powder ½ tsp

Method :-

In a cooker heat oil & ghee .

Throw in whole spices, let it splutter.

Add chillies and onions .Let it get brown.

Add tomatoes ,allow it to get mushy .

Add the ground paste and let it be sautéed till raw smell fades away.

Now add meat and toss it for 2-3minutes.

Add curds ,salt water ( ½ cup ) and cook it under pressure till the meat is more than half cooked.

Now check if the meat is done.

Add water depending on how much is left as residue in the meat mixture.( measure the water )

In total 2 -2 1/2 cup of water will be required .Let the water boil.

Add the rice keep stirring till it becomes thick or all the water is absorbed.

In the meantime heat an old dosa tawa.

Now place this cooker on the tawa , close and cook under pressure for 10 minutes.

Open it by slowly releasing the pressure.

Drizzle ghee and garnish with coriander leaves.
