Bitter Gourd Thokku is simply delicious. This has all the taste bitter ,sour , sweet and spicy .
Bitter Gourd simply steals the show always in a spread and the taste buds are satisfied to the core.
Serves : 4
Cooking Time : 30 min
Ingredients :
Bitter gourd 1 cup
Onion 1 ( chopped )
Tomatoes 2 ( chopped )
Tamarind Extract 1 cup
Jaggery 1 tsp ( to taste )
Red chilly powder ½ - ¾ tsp
Turmeric ¼ tsp
Red chilly 1
Curry leaves a few
Oil 1 tbsp
Method :
In a pan heat oil ,throw in mustard ,urad dhal ,red chilly and curry leaves ,let it all splutter.
Add onion and fry well.
Add tomatoes and fry till mushy.
Add the bitter gourd and give it a toss.
Add salt ,turmeric and chilly powder and give it a mix.
Add tamarind extract and give it a mix.
Close and cook for a few minutes till the vegetable gets soft.
Open and check if its soft .
Then add jaggery and cook to required consistency.
Serve hot with rice.
