Chicken Biriyani

The dish the season which may be” Bowl Of Heaven” to many .This spicy bowl steals every heart .The usage of less whole spices was my mom ‘s signature .Also the blend of ground masala and coconut milk makes one drooling to taste it more than once.



Serves : 4

Cooking time : 50 min


Ingredients :

Basmathi rice 1 ½ cup [washed ]

Chicken 500 gms [washed and cleaned ]

Onions 2 nos [sliced ]

Tomatoes 2 [chopped ]

Ginger garlic paste 2 tbs

Green chilly 3 [slit /to taste ]

Cinnamon 1’ [2 nos]

Cloves 3 nos

Cardamom 2 nos

Bay leaf 2 nos

Curry leaves a few

Cahew 6 nos

Coconut milk 1 – 2 cups [to taste ]

Oil & ghee 3 tbs

Fry & grind to paste :

Red chilly 5 -6 nos

Small Onions 15 nos

Coriander seeds 1 tbs

Curry leaves a few

Oil 1 tsp [castor oil recommended ]


Method :

In a pan heat oil and ghee mixture add whole spice as it splutters add onions ,green chilly .

Let it turn slightly turn brown ,add tomatoes and wait for it to turn mushy .

Ginger garlic paste can be added and tossed for few min.

Now its time to add chicken and toss it once more.

Then the ground masala can be added with water close it with lid let the meat get half cooked .

In a pressure cooker add the rice , salt ,coconut milk [1 cup ] ,water around 1 cup , also the cooked meat mixture .Now give it a stir and make sure the water is just slightly above the rice and meat mixture.

Close it with the lid and allow it to cook for 10 minutes on slow flame with pressure.Wait for 10 minutes and release the pressure.

Slowly stir the rice making sure not to break the grains. As you mix in case you find water at the bottom cook again on slow flame for 5 -7 min.s

Note :

There will be already water remaining from the cooked meat ,so it has to be considered when adding water.

One can straight away use a pressure cooker too .

Lamb /mutton can also be used instead of chicken, in which case this meat takes a longer time to cook .

Then we a pressure cook this meat for 10 min, then can add the rice , coconut milk and water.


Briyani is an addition to many and its lover's never fail to plunge in for the second helping !!!
