Coconut Milk Kuzhambu is simply delicious ,creamy and rich. The Potatoes are cooked in spices and coconut milk has an enriched flavour .Second helping is a must .Also a heart stealer of the spread.

Ingredients :
Potatoes 2-3 ( cooked & smashed )
Onion 1 ( chopped )
Green chilly 2-3 ( to taste )
Red chilly 1
Coconut Milk 1 cup
Bay leaf 2
Cinnamon 1’
Ginger ¼ ‘
Garlic 2-3 pearls ( chopped )
Coconut Oil 11/2 tbsp
Salt to taste
Coriander leaves to garnish
Method :
In a pan heat oil ,throw in bay leaf and cinnamon ,let it splutter.
Add the green and red chillies.
Add the onion ,garlic and ginger ,toss it.
Add the potatoes ,salt and coconut milk ,give it a mix. Just before it starts boiling switch off the flame.
Garnish with coriander leaves.
Serve hot with appam ,bread ,doas ,idly,roti.
