Coconut Milk Pulao

Coconut Milk pulao is simply fantastic .This is all time favourite of one and all. The Basmathi Rice cooked with coconut milk and spices is simply beautiful and rich. Always

a highlight in a spread. It would be always be present in a vegetarian spread.



Serves : 4

Cooking time : 30 min


Ingredients :

Basmati Rice 11/2 cup

Coconut milk 2 cups

Onions 2 ( sliced )

Green chilly 3

Cashew 6-7

Garlic 3-4 pearls ( chopped & optional )

Mint leaves a handful

Coriander leaves a handful

Bay leaf 2

Cinnamon 1’

Oil & ghee 2 tbsp

Salt to taste


Method :

In a cooker heat oil ,throw in spices ,let it splutter.

Add cashew ,let it change colour.

Add onions ,green chilly ,fry well till it changes colour.

Add mint leaves and toss.

Add rice and toss.

Add coconut milk ( 2 cups ) ,water ( 1cup ),salt ,mix well.

As it boils well add coriander leaves ,give it a mix.

Close and cook for 10 – 12 minutes , on low flame.

Heat a tawa and place the cooker on top of it .( dhum effect )

Allow some time for the pressure to get released ,slowly mix, making sure not to break the rice.

Serve hot with ratia /kurma /egg or non - veg gravy.
