This a simple yet tasty ,aromatic rice.
Made with minimalistic ingredients always available in the household. The highly aromatic basmati rice with mild flavoured coriander leaves is a beautiful combination. This is a perfect lunch box recipe and also one for easy go lazy days .

Cooking Time : 40 min
Ingredients :
Basmati Rice 11/2 cups
Onion 1
Coriander leaves 1 cup
Green chilly 2
Red chilly powder ½ tsp
Salt to taste
Oil 11/2 tbsp
Method :
In a cooker heat oil ,add onions ,fry well.
Add green chillies and fry.
Add coriander ( half cup ) and toss.
Add the rice and give a toss.
Now add the chilly powder and toss.
Add salt and water ( 1: 3 ) and mix well .
When the water starts boiling add the remaining coriander leaves and give a quick mix.
Close the lid.
Heat a dosa tawa and place the cooker on top of it ( for dhum )and wait for the steam to arrive ,then place the weight and reduce the flame. Cook for 10 -12 min.
Wait for the pressure to get released ,give a gentle mix.
Drizzle ghee on top and give a gentle mix.
Serve hot with raita |kurma |gravy.
