Swooning Delicacy !!
Briyani the fondness of it is universal !!
The blend of spices ,meat and rice is simply awesome !!
Serves : 4
Cooking Time : 50 min
Ingredients :
Seerakasamba Rice 2 cups ( or Basmathi )
Chicken 500 gms ( cubed )
Coconut milk 2 cups
Curds ½ cup
Tomatoes 2 ( chopped )
Onions 2 ( sliced )
Green chilly 2-3
Bay leaf 2
Cinnamon 2
Cardamom 2-3
Mint leaves 1/2 cup
Oil & ghee 3 tbs
Grind to paste :
Green chilly 5 – 6
Red chilly 4-5
Ginger 3/4 '
Garlic 7 -8
Cardamom 3
Cinnamon 2
Cloves 2
Fennel ½ tsp
Cummin ½ tsp
Poppy Seeds 1/2 tsp
Mint leaves 1 cup
Coriander leaves 3 tbsp ( chopped )
Method :
Mix the sliced onions in curds & set aside.
Heat a cooker or heavy bottomed vessel add the oil & ghee mixture throw in whole spices.
As it splutters add the tomatoes and fry till mushy.
Now add the ground paste and fry .
Add the chicken and give it a toss.
Add the onion curd mixture, turmeric and salt ,stir well ,close with a lid and cook till chicken is half cooked.
Time to add coconut milk ,rice ,mint leaves ,if required salt & water stir well ,close the lid and cook on slow flame for 10 – 15 min.
Open the lid drizzle a spoon of ghee ( optional ) & garnish with coriander leaves.
Serve hot with onion ratia
