Egg Rice

This rice was my childhood favourite .When lunch was sent to school this was my most sought after option.

today its a kind of comforting food .

Its one of the easiest recipe to furnish a wholesome meal !!



Cooking time : 15 min

Serves : 2

Ingredients :

Cooked rice 1 bowl

Onion 1 ( chopped )

Green chilly 2-3 ( slit )

Curry leaves a few

Turmeric ¼ tsp (optional )

Mustard ¼ tsp

Urad dhal ¼ tsp

Channa dhal ¼ tsp

Salt to taste

Eggs 2

Oil /ghee 11/2 tsp


Method :

In a pan heat the oil ,add mustard let it splutter.

Add urad dhal and channa dhal, let it change colour.

Add curry leaves ,green chilly and onions,allow it to get brown.

Now break in the eggs and stir.

Add turmeric and salt.

When eggs are dry add cooked rice and give it a good mix,when the rice becomes hot switch off the fire.

Garnish with coriander leaves.

Serve hot with Pappad/Pickle.


Note :

When there is left over rice ,this is a good option to use it.

Also basmathi /seerakasamba can be used for an enriched flavour.
