Foxtail millet with palm jaggery pongal!!
Two in one healthy way to indulge in a sweet treat !!
Goodness of millet infused with health benefits of palm jaggery resulting in an scrumptious sweet treat !!
Ingredients :-
Foxtail millet 1 cup
Greengram dhal ¼ cup
Palm Jaggery 1-11/2 cup
Ghee ½ cup
Grated Coconut 2 - 3 tbsp
Salt a pinch
Cardamom powder a pinch (or to taste )
Method :-
Heat a spoon of ghee in a pan & roast the grated coconut and set aside.
In a pressure cooker add the washed millet, dhal ,pinch of salt with 2 - 3 glasses of water & pressure cook for 4-5 whistles.
Release the pressure.
Give a good mix.
Add the jaggery and give good mix ,allow it to cook till raw smell fades away.
As it keeps cooking add ghee now and then.
Add the cardamon powder ,grated coconut and give it to a good mix.
Serve hot .
Note:-
We can fry cashew ,raisins in ghee and add to the pongal.
Any millet can be used.Any jaggery can be used for taste variation.
