Drooling Delicacy !!
Its a super delicious dish ,which is one of the favorite dish of my mom.
Serves : 3
Cooking Time : 30 min
Ingredients :
Brinjal 2 ( egg plant )
Tamarind extract 3-4 tbs ( to taste )
Onions 1
Green chilly 2-3 ( to taste )
Turmeric ¼ tsp
Curry leaves a few
Coriander leaves to garnish
Oil 11/2 tbsp
Method :
Smear some oil on the brinjal.
Pierce a skewer at the rear edge of the brinjal and heat it on the flame ,let it become charged.Keep rotating the vegetable so that it is cooked on all sides.
When it reaches room temperature peel the skin , smash it well.
In a pan heat oil add mustard ,urad dhal ,allow it to splutter.
Add onions, green chilly ,curry leaves and toss it.
Add the tamarind extract ,turmeric and salt , let it boil and thicken a bit.
Now add the smashed brinjal with water to the required consistency and let it boil ,till raw smell leaves.
Garnish with coriander leaves.
Serve hot with idly / dosa / roti .
