Festive Delicacy on a healthy note !!
With Krishna Jayanthi round the corner and prasadam is usually made as an offering .This millet is rich on fibre and low in glycemic index ,hence this pongal results in a healthy version .
Kodo millet with onions enriched with coconut milk is simply delicious .
Serves : 3
Cooking time : 40 min
Ingredients :
Kodo (varagu )millet 1 cup
Cloves 2
Cinnamon 1”
Cashews 15 nos
Onions 2-3 ( sliced )
Green chilly 6 ( to taste )
Ginger 1 tsp ( chopped )
Coconut milk 2 cups
Tomato 1 (chopped )
Coriander leaves to garnish
Oil & ghee 11/2 - 2 tbsp
Salt to taste
Method :
In a pressure pan heat oil and ghee .
Throw in cinnamon and cloves , let it splutter.
Add cashews .let it change colour.
Throw in ginger .
Add curry leaves and green chilly ,let it splutter.
Add onion and saute it ,till it changes colour.
Add the tomatoes ,let it get mushy.
Add the millets ( washed and drained ) give it a toss.
Add coconut milk and water ( 1 -11/2 cups ) .If you want it mushy add more water.
Add salt to taste ,give it a mix and close and cook under pressure . ( 10 – 15 min )
Release the pressure ,give and good mix.
Drizzle ghee for an enhanced taste.
Garnish with coriander leaves .
Serve hot with chutney or sambar.
