My favorite !!
On special occasions or festive times ,if i was asked what i wanted ,it would be always this .Be it my birthday or Diwali this dish would adorn our dinning table. When i started cooking ,i took to making it more often,for it was very easy and tasty.Also this rice goes hand in hand with many veg and non veg gravies.
Serves : 3
Cooking Time : 25 min
Ingredients :
Basmathi Rice 1 cup
Peas 1 cup
Onions 1 ( chopped )
Garlic 1 tbsp ( chopped )
Ginger ¾ tsp ( chopped )
Green Chilly 4-5 (slit )
Coconut milk 11/2 cup
Cashew 5-6
Curry Leaves a few
Bay leaf 1
Cardamom 2
Cinnamon 2
Oil & ghee 1 – 11/2 tbsp
Salt to taste
Method :
In a cooker heat oil & ghee ,throw in bay leaf ,cinnamon & cardamom.
As it splutters add chilly & curry leaves and allow it to saute it.
Add cashew ,ginger and garlic, give it a toss.
Add onions and brown it.
Add rice and give it a toss.
Now add salt and peas.
Add coconut milk and water , mix well.
Close and cook under pressure for 10 min on slow flame.
Release the pressure , give it a mix .
Garnish with coriander leaves .
Serve hot with raita or kurma.
