Ridge Gourd Kootu is supposed to be the tastiest of its kind. The dahl cooked with vegetable and coconut paste is simply an awesome combination. Kootu is packed with goodness of protein and vegetable is a healthy and delicious combination.

Ingredients :
Green gram dhal 1 cup ( cooked )
Ridge Gourd 1 cup ( chopped )
Mustard ¼ tsp
Urad dhal ¼ tsp
Onions 1 tbsp ( chopped )
Red chilly 1
Curry leaves a few
Coriander leaves to garnish
Coconut oil 1 tsp
Grind to paste :
Coconut 1 ½ tbsp ( grated )
Green chilly 2
Cumin ½ tsp
Method :
In a pan heat oil ,throw in mustard ,urad dhal ,let it splutter.
Add onions ,red chilly and curry leaves ,toss it.
Add chopped ridge gourd ,salt ,give it a mix.
Add cooked dhal give it a mix.
Add the ground paste ,stir it, close and cook . ( 7-10 min )
Open the lid and give it a mix.
Cook to required consistency .
Garnish with coriander leaves.
Serve hot with rice / roti .
