A simple aromatic dish ,which is very light on the stomach. The flavour is so different and never can anyone resist a second helping .The rice is already aromatic ,as it gets cooked with jaggery and blended with coconut and ghee is excellent .
Serves : 3-4
Cooking Time : 1 hour
Ingredients :
Kavuni Rice 1 cup
Jaggery 3/4 cup
Coconut 1 cup ( grated )
Ghee 2 tbsp ( to taste )
Method :-
In a pressure pan heat the ghee and fry the washed rice till a lovely aroma arises.
Add 4-5 glasses of water and cook .( 20 -25 min )
Release the pressure and check if the rice is cooked.
Now add the jaggery and give a quick mix.
Let it get cooked on low flame till raw smell leaves ,occasionally stirring it so that the bottom does’nt catch.
Now add the grated coconut and drizzle ghee .
Give it a good mix .
Serve hot.
