Vegetable Kurma – Resturant Style

Vegetable Kurma is the one which is served in restaurant's .This is a very simple ,easy to make with minimalistic ingredients.The mixed vegetable cooked with mild spices and coconut results in a yummy kurma.



Serves : 3

Cooking Time : 20 min


Ingredients:

Mustard ¼ tsp

Urad dhal ¼ tsp

Red chilly 1

Curry leaves a few

Onion 1 (chopped )

Tomato 1 ( chopped )

Carrot 1 ( cubed )

Potato 1 ( cubed )

Khol – Rabi 1( cubed )

Coconut oil 1 tbsp

Salt to taste


Grind to paste :

Coconut 2-3 tbsp( grated)

Fennel ¼ tsp

Cashew 4-5

Green chilly 1-2 ( to taste )


Method :

In a pan heat oil throw in mustard ,let it splutter.

Add urad dhal let it change colour.

Add the curry leaves ,red chilly ,onions ,allow it to change colour.

Add tomato and let it get mushy.

Add the vegetables with salt ,give it a mix ,close and cook. ( 5-7 min )

Add the ground paste with water ,close and cook .(5 min )

Open the lid ,garnish with coriander leaves.

Serve hot with rice /roti.
