Punjab is a state well known for its rich buttery creamy food !!This Punjabi Chicken is a very promising dish. As the name indicates ,its in a rich Punjabi style chicken . The caramelizing of sugar in the start of this dish is basically the high light. Also the usage of ghee to prepare this dish with combination of saffron and coconut cashew paste elevates the flavour to a very high level.

Ingredients :

  • Chicken 500 gms
  • Onions 2-3 ( sliced )
  • Tomatoes 2-3 ( chopped )
  • Ginger garlic paste 11/2 tsp
  • Curds ½ cup
  • Saffron few strands
  • Turmeric ¼ tsp
  • Sugar 2 tsp
  • Cardamom 3 – 4
  • Cloves 3 – 4
  • Garam masala powder ½ – ¾ tsp
  • Kasturi methi 1 tsp
  • Coriander leaves to garnish
  • Sugar 2 tsp
  • Salt to taste
  • Ghee 2 tbsp
  • Grind to paste : 1
  • Red chilly 3-4
  • Onions ½ ( optional )
  • Coriander seeds 2 tsp
  • Poppy seeds 1 tsp
  • Grind to paste :2
  • Cashew 5-6
  • Coconut 3 tbsp (grated )

Method :

  • Marinate the chicken with ginger garlic paste ,curds ,salt and turmeric, for 30 min .( at least )
  • In a cooker heat ghee ,add sugar let it get caramelised.
  • Add onions fry to brown colour.
  • Add tomatoes and fry till mushy.
  • Add the ground spices paste and fry till raw smell leaves.
  • Add water and toss.
  • Add marinated chicken and toss.
  • Add a few strands of saffron , give it a mix .
  • Close and cook under pressure for 10 minutes.
  • After the pressure is released ,check whether the meat is soft ,then if in case its watery let it boil for a while for the water to evaporate.
  • When its almost thick add the coconut cashew paste, give it a boil for the raw smell to leave.
  • Now switch off the stove add garam masala,crushed kasthuri methi and coriander leaves.
  • Serve hot with roti, rice ,dosa.
