Dhal Kitchadi is a very easy dish ,more like one pot cooking .This is healthy ,convenient and comfort food. Dhal Kitchadi is protein enriched a real whole some meal.This works good for a lazy day ,busy day, for bachelors too. Any dhal can be used ,mixed dhal too would work ,but for best results green gram dhal with skin is suggested.

Ingredients :

  • Basmati Rice 1 cup
  • Green gram dhal ¾ cup ( with skin )
  • Bottle gourd 1 cup ( chopped )
  • Curry leaves a few
  • Red chilly 1
  • Coconut ½ cup ( grated )
  • Cumin ½ tsp
  • Cinnamon 1’
  • Asafoetida ¼ tsp
  • Red chilly powder ½ tsp
  • Turmeric ¼ tsp
  • Coriander leaves to garnish
  • Salt to taste
  • Bay leaf 2 ( optional )
  • Oil & ghee 11/2 tbsp

Method :

  • Heat oil, ghee add bay leaf ,cinnamon ,curry leaves ,let it splutter.
  • Add red chilly ,cumin and toss.
  • Add the chopped bottle gourd ,turmeric and toss.
  • Add the washed dhlal and rice together and toss.
  • Add red chilly powder ,coconut,salt and water ( 3-4 cups ), depending on the consistency required.
  • When each grain separate is required then 3 -31/2 cup will be sufficient.
  • When a nice soggy rice is required then 4 – 41/2 cups can be used.
  • Close and cook under pressure for 10 – 12 min.
  • Open and garnish with coriander leaves .
  • Drizzle ghee for enriched taste.
  • Serve hot with Papad /Appalam.

Note :

  • Can be made without vegetable too.
  • Palak , or any kind of greens can be used.
