Mint Pulao is a very mild spiced rice ,yet high on taste .

This Mint Pulao can never go wrong ,even for the beginners. The mint ground with coconut enriches the taste of the rice. Also the addition of potatoes gives it a bit of a punch. This Mint Pulao is a good recommendation for the lunch box.

Ingredients :

  • Basmati Rice 1 cup
  • Onion 1(sliced )
  • Potatoes 2(cubed)
  • Turmeric 1/4tsp
  • Cinnamon 1″
  • Cardamom 2
  • Cloves 2
  • Mace 2
  • Salt to taste
  • Oil & ghee 11/2 tbsp

Grind to a Paste :

  • Mint leaves a cup
  • Green chilly 4-5
  • Ginger 3/4 “
  • Garlic 3-4 pearls
  • Cumin 3/4-1 tsp
  • Coconut 1 cup (grated )

Method :

  • Cook the rice with salt just right ( no over cooking ) grains should be separate .
  • It is a good idea to use a spoon of oil in the water while cooking the rice.
  • Once the rice is cooked allow it to cool.
  • In a pan heat oil and ghee .
  • Throw in whole species ,let it splutter.
  • Add onions and let it get transparent.( a pinch of salt can be added to quickly change
  • colour of the onions .)
  • Add the potatoes and fry for a bit.
  • Add the ground paste ,salt and give it a toss.
  • Add water (1/2 cup ) and mix.
  • Close and cook ,till potatoes get ½ – ¾ cooked.
  • Now open the lid ,and fry till the moisture is dried up.
  • Now add the cooked rice and give a gentle mix ,till the rice gets warm.
  • Garnish with coriander leaves .
  • Serve hot with raita.
