Mushroom Egg Noodles

This Noodles used to be one of the sought after dishes when lunch packing was a ritual in our house hold. Not many veggies to be chopped so was an easy peasy dish to pack in the hurry burry .Kids friendly hence no addition of sauces.

Ingredients :

  • Noodles 1 pack (100 gms)
  • Onion 1 ( sliced )
  • Egg 1
  • Green chilly 1
  • Cabbage 1 cup ( stripped )
  • Capsicum 1 ( sliced )
  • Maggi cubes 1-2
  • Mushrooms 100 gms
  • Salt to taste
  • Oil 1 ½ tbsp

Method :

  • Boil water in a pan add few drops of oil and salt ,add the noodles and cook for 5 – 7minutes.
  • Strain it ,run cold water and keep aside.
  • In a pan heat oil add mushrooms fry well till no water is left ,set aside.
  • Add some more oil to the same pan and throw in onions and green chilly , let it change colour.
  • Add cabbage and stir well for 2 min.
  • Add capsicum and toss.
  • Now add the cooked noodles and mix well.
  • Make an omelette of the egg ,cut into strips and place it on top of the noodles.
  • Serve hot.

Note :

  • Sauces like red chilly ,green chilly ,soya sauce can be added to personal preference.
