Carrot Pongal is a Pongal with a punch . Carrot which is rich in vitamin tossed with ginger and green chilly enhances the taste ,when mixed with the rice cooked in coconut milk is simply drooling .Always a super hit in a spread .Healthy Carrot Pongal filled with protein and taste .
Ingredients :
- Raw rice 1 cup
- Moong dhal ½ cup
- Carrot 1 cup ( grated )
- Peas a handful
- Mustard ¼ tsp
- Curry leaves a few
- Asafoetida ¼ tsp
- Turmeric ¼ tsp
- Cashew 7-9
- Coconut milk 2 cups
- Salt to taste
- Oil & ghee 11/2 tbsp
- Grind to paste :
- Ginger ½ tsp ( chopped )
- Green chilly 4-5
Method
- In a pressure cooker add washed rice & dhal .
- Add coconut milk , water ,salt ,turmeric and asafoetida ,mix well . Close and cook for 10 -15 min.
- Release the pressure and give a mix.
- In a kadai heat oil & ghee mixture.
- Fry the cashew and keep it aside.
- In the same kadai throw in mustard seeds, let it splutter.
- Add curry leaves ,then tomatoes and toss.
- Add the ground paste , toss it and wait for the raw smell to leave.
- Add the carrot and peas and mix well .
- Add the fried cashew and give it a stir.
- Add to the cooked rice and give a good mix.
- It would be a good idea to drizzle ghee .
- Garnish with coriander leaves.
- Serve hot with coconut chutney ,tomato thokku or chutney ,sambar .
