Must try Foxtail millet curd rice !!Healthy & tasty !!

Millets are being sought after in the recent past for its health benefits some namely low G.I.index,controlls blood sugar,high in fibre,rich in anti-oxidants.Here Fox tail millet is used .The foxtail millet is well mixed with milk & curd to give it a smooth texture .Also to top it off its seasoned with spieces which inturn enhances the taste of foxtail millet curd rice.

Ingredients :-

  • Millet 1 cup
  • Curd 1-1/2 cup
  • Milk ½ – ¾ cup
  • Butter ½ tsp
  • Salt required to taste
  • To Garnish :-
  • Oil 1 tsp
  • Mustard ¼ tsp
  • Urad dhal ¼ tsp
  • Red chilly 1
  • Green chilly 1
  • Roasted Peanut 1 tsp
  • Coriander to garnish

Method :-

  • In a heavy bottomed vessel add 1 -1/2 cup water ,allow it to boil.
  • Add the millet & cook till it is soft.
  • When it is hot itself smash it well with a spoon or a smasher .
  • When it is well smashed add butter & salt ,give it a good mix.
  • Add milk and mix well without any lumps.
  • Now season it add to the millet mix and give it a good mix.
  • Whenit gets to room temperature ,add curds and mix well .
  • Garnish with coriander leaves.

Note :-

  • Any millet can be used for this recipe.
  • Ground nuts is optional.
  • Other nuts like cashew can also be used.
  • Raisins & pomegranate can be used.
