Cheesy Baked Cauliflower

A sincere drooling white fantasy.
Made with white ingredients alone is an exquisite delicacy .As a kid when mom cooked this i disliked it, but not any more!!

Ingredients :

  • Cauliflower 1 cup (flowerlets )
  • Madia 3-4 tbsp (other name all purpose flower )
  • Milk 1 cup
  • Cheese ¼ cup(grated )
  • Salt to taste
  • Pepper to taste
  • Spices to taste (optional)
  • Butter 2-3 tbsp
  • Bread crumbs 2-3 tbsp

Method :

  • Wash and clean the cauliflower ,allow it to stay in salt water for few minutes.
  • In a pan heat butter fry the cauliflower and keep aside.
  • In the same pan add some more butter and slightly fry the maida on slow flame till a nice aroma comes .
  • Now switch off the flame and wait for it to come to room temperature. Now if there are any lumps in the flour keep stirring , it will break as it cools .When you make sure there are no lumps ,then slowly start adding milk( should not be hot ) to it. Nicely stir the mixture ,making sure you find no lumps.
  • Now leave it on the stove with slow flame and keep stirring it.Let the mixture slightly thicken.
  • Now add fried cauliflower ,cheese salt ,pepper .If you wish to add species ( oregano/ rosemary,etc )
  • You can add now.If you find the mixture is thick then add more milk to the consistency you want.
  • Keep in mind as you bake ,it will thicken a little.
  • Grease a glass baking tray and transfer the content to it .Smoothen on top with a spoon.
  • Now sprinkle bread crumbs and grated cheese .
  • Let it bake 15-20 min (approx. ) /till the surface browns.
  • Serve hot.
