Spicy Country Style Chicken Kuzhambu

Spicy Country Style Chicken Kuzhambu is a delicious curry. The species blend together with coconut and cashew makes it a flavoursome and rich. This Chicken Kuzhambu never fails to sweep the hearts of the tasters.

Ingredients :

  • Chicken 450 gms
  • Cinnamon 2 “
  • Cardamom 3-4
  • Cloves 3-4
  • Onions 2(sliced )
  • Green chilly 2
  • Curry leaves a few
  • Turmeric 1/4 tsp
  • Salt to taste
  • Ghee/oil 1 tbsp
  • Coriander leaves to garnish

Grind to a paste :

  • Ginger 1/2″
  • Garlic 3-4(pearls )
  • Onion 1 (chopped )
  • Cumin 1 tsp
  • Fennel 1 tsp
  • Coriander seeds 2 tbsp
  • Red chilly powder 11/2 tbsp
  • Coriander leaves a bunch
  • Coconut 2-3tbsp(grated )
  • Cashew 4-5

Method :

  • In a pressure cooker add the chicken ,toss it till it changes colour.
  • Add some salt and give a good mix.
  • Add the ground paste & give it a toss.
  • Add water ( 1-2 cups ) ,give it a mix.
  • Close and cook . ( 10 min approx. )
  • Release the pressure ,check if meat is cooked.
  • Set aside.
  • In a kadai heat oil /ghee .
  • Roast the cashew to brown colour and set aside to garnish .
  • In the same oil / ghee add the whole species and toss.
  • Add onions,green chilly and curry leaves, allow the colour to change.
  • Add a ladle of the curry into the kadai ,transfer the contents in the kadai to the cooker .
  • Give it a boil .
  • Garnish with coriander leaves and fried cashew.
  • Serve hot with rice /roti/idly/dosa.
