My Mom’ s exquisite and signature dish !

The festival down the corner , an authentic sweet is a definite indulge. All the households will swarm with sweets and a Halwa is a must try.

Ingredients :

  • Samba wheat 1 cup
  • Sugar 2 cups
  • Ghee 1- 11/2 cups
  • Orange colouring ¼ tsp
  • Milk 1 tbsp
  • Cardamom powder ¾ tsp ( to taste )
  • Nutmeg powder ¼ tsp ( to taste )
  • Rasins a few
  • Cashew a few

Method :

  • Soak the wheat overnight.
  • Grind it with water ( approx. 1 -2 cups ) and extract milk .
  • In a heavy bottomed vessel add the sugar ,with ¾ cup water and bring it to boil.
  • Now add milk and leave it for a few minutes.
  • The debris will collect at the sides of the pan.
  • Use a spoon and collect it to a cup with water, wait for the sugar syrup to clear up.
  • Now add the extract ,which is already mixed with colouring.
  • Keep stirring it ,with care as it can stick to the bottom.
  • When a glossy texture is reached ,start adding ghee at regular intervals till it leaves the sides of the pan.
  • Switch off the flame and add the nutmeg and cardamom powders.
  • Fry cashew and raisins in ghee and add to the halwa.
  • Serve hot.
