Sprouted greengram with veggies kurma

A very versatile & healthy dish enriched with protein & fibre.A mild spiced gravy which is loved by one and all.

Ingredients :-

  • Sprouted Green gram 1 cup
  • Mixed Vegetables 1 – ½ cup (carrot ,peas,beans,potatoe )
  • Salt to taste
  • Turmeric ½ tsp
  • Chilly powder ½ – 3/4 tsp ( to taste )
  • Coriander powder ½ tsp
  • Coriander leaves 2 tbsp ( chopped )

To season :-

  • Mustard ½ tsp
  • Urad dhal ½ tsp
  • Big onion 1 chopped
  • Tomato 1 chopped
  • Curry leaves a few
  • Red chilly 1
  • Oil 1 tsp
  • To grind to a coarse paste :-
  • Grated Coconut 2-3 tbsp
  • Fennel ½ tsp
  • Garlic 2-3 pearls
  • Puffed Bengal gram 1tbsp

Method :-

  • In a cooker or heavy bottomed vessel heat oil .
  • Add mustard ,urad dhal ,let it splutter.
  • Add onions ,curry leaves ,red chilly,wait for onions to change colour.
  • Now add tomatoes ,allow it to get mushy.
  • Add sprouted dhal ,veggies,powders ,salt and cook approx. 10 min.
  • Now add the ground paste ,let it cook till raw smell leaves.
  • Garnish with coriander leaves.

Note :-

  • This gravy tastes good with rice ,chappati,puri,iddli,dosa.
