Bitter Gourd Thokku is simply delicious. This has all the taste bitter ,sour , sweet and spicy .

Bitter Gourd simply steals the show always in a spread and the taste buds are satisfied to the core.

Ingredients :

  • Bitter gourd 1 cup
  • Onion 1 ( chopped )
  • Tomatoes 2 ( chopped )
  • Tamarind Extract 1 cup
  • Jaggery 1 tsp ( to taste )
  • Red chilly powder ½ – ¾ tsp
  • Turmeric ¼ tsp
  • Red chilly 1
  • Curry leaves a few
  • Oil 1 tbsp

Method :

  • In a pan heat oil ,throw in mustard ,urad dhal ,red chilly and curry leaves ,let it all splutter.
  • Add onion and fry well.
  • Add tomatoes and fry till mushy.
  • Add the bitter gourd and give it a toss.
  • Add salt ,turmeric and chilly powder and give it a mix.
  • Add tamarind extract and give it a mix.
  • Close and cook for a few minutes till the vegetable gets soft.
  • Open and check if its soft .
  • Then add jaggery and cook to required consistency.
  • Serve hot with rice.
