Palak Paneer With Carrot Burjee

Palak Paneer with Carrot Bhurje is easy to make and a healthy one too .

Its kids friendly and versatile too.Packed with veggies and eggs makes a meal complete.

Ingredients :

  • Onion 1 ( chopped )
  • Green chilly 1-2 ( chopped & to taste )
  • Palak 2-3 ( handful & chopped )
  • Carrot 1 cup ( grated )
  • Paneer 150 – 200 gms
  • Eggs 2-3 ( to taste )
  • Oil ½ tbsp
  • Pepper ¼ tsp ( optional )
  • Salt to taste

Method :

  • Heat oil ,toss in onions and green chilly ,let it fry till transparent.
  • Add palak ,give it a toss ,close and cook till soft .
  • Open the lid , check if its soft .Fry till dry .
  • Add the crumbled paneer , salt and give it a good mix .Fry till dry.
  • Now time to add carrots and fry well till no moisture is left behind.
  • Break open the eggs ,if need be add salt and fry well till dry .
  • Serve hot with bread ,roti .
