Palak Paneer with Carrot Bhurje is easy to make and a healthy one too .
Its kids friendly and versatile too.Packed with veggies and eggs makes a meal complete.
Ingredients :
- Onion 1 ( chopped )
- Green chilly 1-2 ( chopped & to taste )
- Palak 2-3 ( handful & chopped )
- Carrot 1 cup ( grated )
- Paneer 150 – 200 gms
- Eggs 2-3 ( to taste )
- Oil ½ tbsp
- Pepper ¼ tsp ( optional )
- Salt to taste
Method :
- Heat oil ,toss in onions and green chilly ,let it fry till transparent.
- Add palak ,give it a toss ,close and cook till soft .
- Open the lid , check if its soft .Fry till dry .
- Add the crumbled paneer , salt and give it a good mix .Fry till dry.
- Now time to add carrots and fry well till no moisture is left behind.
- Break open the eggs ,if need be add salt and fry well till dry .
- Serve hot with bread ,roti .
