Rice Love !!
A very special dish .Usually cabbage is not a fancied veggie, but this rice is a super combination of the spices and coconut with basmati is simply delicious .In vegetarian spread definitely ,a heart stealer.
Ingredients :
- Basmati Rice 11/2 cups
- Onions 2 ( sliced )
- Green Chilly 3 ( to taste )
- Curry leaves a few
- Cinnamon 1’
- Cardamom 2-3
- Bay leaf 2
- Ginger garlic paste 11/2 tsp
- Turmeric ¼ tsp
- Garam Masala ¾ tsp( optional )
- Cabbage 1 — 11/2 cup
- Peas 1 cup
- Lime ½ ( juice )
- Coconut 1 cup ( grated )
- Oil 11/2 tbsp
- Salt to taste
Method :
- In a pressure cooker heat oil add bay leaf ,cinnamon, cardamom ,curry leaves ,green chilly ,let them splutter.
- Add onions ,let it change colour .
- Add ginger garlic paste and toss .
- Add rice ,salt ,turmeric and toss.
- Add in the cabbage and peas ,toss it.
- Add water ( 3 cups ) ,coconut ,turmeric and garam masala ,mix wee.
- Add juice of ½ lime stir it.
- Heat a dosa tawa and pace the cooker on top of the tawa .( for dhum effect )
- Close it with a lid and cook under pressure on low flame for 10 -15 min.
- When the pressure is released ,gently mix the rice .
- Garnish with coriander leaves,
- Serve hot with onion raita.
