Vegetable Kurma – Resturant Style

Vegetable Kurma is the one which is served in restaurant’s .This is a very simple ,easy to make with minimalistic ingredients.The mixed vegetable cooked with mild spices and coconut results in a yummy kurma.

Ingredients:

  • Mustard ¼ tsp
  • Urad dhal ¼ tsp
  • Red chilly 1
  • Curry leaves a few
  • Onion 1 (chopped )
  • Tomato 1 ( chopped )
  • Carrot 1 ( cubed )
  • Potato 1 ( cubed )
  • Khol – Rabi 1( cubed )
  • Coconut oil 1 tbsp
  • Salt to taste

Grind to paste :

  • Coconut 2-3 tbsp( grated)
  • Fennel ¼ tsp
  • Cashew 4-5
  • Green chilly 1-2 ( to taste )

Method :

  • In a pan heat oil throw in mustard ,let it splutter.
  • Add urad dhal let it change colour.
  • Add the curry leaves ,red chilly ,onions ,allow it to change colour.
  • Add tomato and let it get mushy.
  • Add the vegetables with salt ,give it a mix ,close and cook. ( 5-7 min )
  • Add the ground paste with water ,close and cook .(5 min )
  • Open the lid ,garnish with coriander leaves.
  • Serve hot with rice /roti.
