Vegetable Kurma is the one which is served in restaurant’s .This is a very simple ,easy to make with minimalistic ingredients.The mixed vegetable cooked with mild spices and coconut results in a yummy kurma.
Ingredients:
- Mustard ¼ tsp
- Urad dhal ¼ tsp
- Red chilly 1
- Curry leaves a few
- Onion 1 (chopped )
- Tomato 1 ( chopped )
- Carrot 1 ( cubed )
- Potato 1 ( cubed )
- Khol – Rabi 1( cubed )
- Coconut oil 1 tbsp
- Salt to taste
Grind to paste :
- Coconut 2-3 tbsp( grated)
- Fennel ¼ tsp
- Cashew 4-5
- Green chilly 1-2 ( to taste )
Method :
- In a pan heat oil throw in mustard ,let it splutter.
- Add urad dhal let it change colour.
- Add the curry leaves ,red chilly ,onions ,allow it to change colour.
- Add tomato and let it get mushy.
- Add the vegetables with salt ,give it a mix ,close and cook. ( 5-7 min )
- Add the ground paste with water ,close and cook .(5 min )
- Open the lid ,garnish with coriander leaves.
- Serve hot with rice /roti.
