Basmati sweet Pongal is highly flavourful one !!
Basmati rice gives a very deep intense flavour to the sweet pongal ,which the raw rice fails to give.
As such pongal is a very special dish which is actually madantory in a pooja or as a prasadam.It is one of the common dish which one can expect in an occassion or a special event.One needs to try with basmati rice to relish it with a simply breathtaking aroma !!
Ingredients :-
- Basmati rice 1 cup
- Moong dhal ¼ cup
- Jaggery 11/4 cup – 11/2 cup
- Ghee 6-7 tbsp
- Salt a pinch
To tamper :-
- Cashew 10 nos
- Raisins 10 nos
- Cardamon powder ¼ tsp
- Edible camphor a pinch
- Ghee I tbsp
Method :-
- In a thick bottomed vessel add the jaggery & water ¼ cup .
- Heat this till it boils well & jaggery gets disintergrated.
- Now filter it in a sieve & set aside.
- In a cooker cook rice & dhal with 1;2 water & a pinch of salt for 10 -12 minutes.
- Let the pressure get released naturally.
- Open the cooker and give it a good mix.
- Let the mixture become like a paste.
- Now add the jaggery water& give it a good mix.
- So that no lumps are left behind.
- Cook it on low flame ,stirring it now & then.
- Add ghee in small quantity so that it does not stick to the bottom.
- The more the ghee ,more the taste.
- Let it cook till raw smell has disappeared.
- Now tamper it & give a good mix.
- Serve hot.
