Bottle Gourd or Lauki or Suraikai is a very easily available vegetable ,which is made into a delicious kheer which steals the show always. This a very affordable vegetable is transformed into a yummylicious desert.

Simple yet delicious , and its cooked in milk which enhances the taste to a different level. The saffron blends with the milk to give a slight yellow colour and the when the vegetable is cooked in the milk blends like best friends.

Ingredients :

  • Milk 1 lit
  • Raisins 10 -15
  • Cashew 10
  • Ghee 1 tsp
  • Lauki 1 cup ( grated )
  • Saffron few strands
  • Sugar ¾ – 1 cup

Method :

  • In a kadai heat ghee ,fry raisins and cashew separately ,set aside.
  • In the same ghee fry the grated lauki till dry.
  • Heat milk in a broad vessel ,let it become half the quantity.( keep stirring it on and off )
  • Add a few saffron strands to the milk as it boils.
  • Now add the fried lauki and let it cook .( 10 min )
  • Switch off the flame at desired consistency .
  • Garnish with fried cashew and raisins.
  • Serve hot or cold.
