Bitter Gourd Thokku is simply delicious. This has all the taste bitter ,sour , sweet and spicy .
Bitter Gourd simply steals the show always in a spread and the taste buds are satisfied to the core.
Ingredients :
- Bitter gourd 1 cup
- Onion 1 ( chopped )
- Tomatoes 2 ( chopped )
- Tamarind Extract 1 cup
- Jaggery 1 tsp ( to taste )
- Red chilly powder ½ – ¾ tsp
- Turmeric ¼ tsp
- Red chilly 1
- Curry leaves a few
- Oil 1 tbsp
Method :
- In a pan heat oil ,throw in mustard ,urad dhal ,red chilly and curry leaves ,let it all splutter.
- Add onion and fry well.
- Add tomatoes and fry till mushy.
- Add the bitter gourd and give it a toss.
- Add salt ,turmeric and chilly powder and give it a mix.
- Add tamarind extract and give it a mix.
- Close and cook for a few minutes till the vegetable gets soft.
- Open and check if its soft .
- Then add jaggery and cook to required consistency.
- Serve hot with rice.
