This sweet potato pongal is a very unique dish !!

This is a scrumptious and filling dish !!

Sweet Potato Pongal is an all time favourite dish !!

The humble Sweet Potato probably an unsung hero which can be otherwise termed as natures candy is packed with health benefits which treats the palate too.It is a filling food with fibre & protein which stands as a sort after by protein watchers too.

Ingredients :-

  • Sweet Potatoes 200 gms ( cubed )
  • Moong dhal 3-4 tbsp
  • Ginger ½ ‘’
  • Pepper ½ tsp
  • Cumin ½ tsp
  • Green chilly 2
  • Curry leaves a few
  • Oil /ghee 1-11/2 tbsp
  • Asafoetida ¼ tsp
  • Salt to taste
  • Coriander leaves 2 tbsp ( chopped)

Method :-

  • In a kadai heat oil .
  • Add pepper ,cummin ,g.chilly ,curry leaves,ginger.
  • Give it a toss.
  • Add the moong dhal & toss it.
  • Add the sweet potatoes ,salt ,give it a slow mix.
  • Close the lid and cook on slow flame,stirring it on & off .
  • If needed water can be sprinkled.
  • When potatoes are tender switch off from fire .
  • Garnish with coriander leaves.
  • Serve hot with chutney or sauce.

Note :-

  • This Sweet potato pongal is a fancy ,versitile dish .Filled with fibre & carb from the vegetable itself & protein from moong dhal makes it a heathy option which turns out to a very filling as well as delicious dish .One needs to make sure that this sweet potato pongal has to be served hot with some nice spicy chutney !!
