Coconut Milk pulao is simply fantastic .This is all time favourite of one and all. The Basmathi Rice cooked with coconut milk and spices is simply beautiful and rich. Always a highlight in a spread. It would be always be present in a vegetarian spread.

Ingredients :

  • Basmati Rice 11/2 cup
  • Coconut milk 2 cups
  • Onions 2 ( sliced )
  • Green chilly 3
  • Cashew 6-7
  • Garlic 3-4 pearls ( chopped & optional )
  • Mint leaves a handful
  • Coriander leaves a handful
  • Bay leaf 2
  • Cinnamon 1’
  • Oil & ghee 2 tbsp
  • Salt to taste

Method :

  • In a cooker heat oil ,throw in spices ,let it splutter.
  • Add cashew ,let it change colour.
  • Add onions ,green chilly ,fry well till it changes colour.
  • Add mint leaves and toss.
  • Add rice and toss.
  • Add coconut milk ( 2 cups ) ,water ( 1cup ),salt ,mix well.
  • As it boils well add coriander leaves ,give it a mix.
  • Close and cook for 10 – 12 minutes , on low flame.
  • Heat a tawa and place the cooker on top of it .( dhum effect )
  • Allow some time for the pressure to get released ,slowly mix, making sure not to break the rice.
  • Serve hot with ratia /kurma /egg or non – veg gravy.
