Foxtail millet with palm jaggery pongal!!

Two in one healthy way to indulge in a sweet treat !!

Goodness of millet infused with health benefits of palm jaggery resulting in an scrumptious sweet treat !!

Ingredients :-

  • Foxtail millet 1 cup
  • Greengram dhal ¼ cup
  • Palm Jaggery 1-11/2 cup
  • Ghee ½ cup
  • Grated Coconut 2 – 3 tbsp
  • Salt a pinch
  • Cardamom powder a pinch (or to taste )

Method :-

  • Heat a spoon of ghee in a pan & roast the grated coconut and set aside.
  • In a pressure cooker add the washed millet, dhal ,pinch of salt with 2 – 3 glasses of water & pressure cook for 4-5 whistles.
  • Release the pressure.
  • Give a good mix.
  • Add the jaggery and give good mix ,allow it to cook till raw smell fades away.
  • As it keeps cooking add ghee now and then.
  • Add the cardamon powder ,grated coconut and give it to a good mix.
  • Serve hot .

Note:-

  • We can fry cashew ,raisins in ghee and add to the pongal.
  • Any millet can be used.Any jaggery can be used for taste variation.
