Foxtail millet with palm jaggery pongal!!
Two in one healthy way to indulge in a sweet treat !!
Goodness of millet infused with health benefits of palm jaggery resulting in an scrumptious sweet treat !!
Ingredients :-
- Foxtail millet 1 cup
- Greengram dhal ¼ cup
- Palm Jaggery 1-11/2 cup
- Ghee ½ cup
- Grated Coconut 2 – 3 tbsp
- Salt a pinch
- Cardamom powder a pinch (or to taste )
Method :-
- Heat a spoon of ghee in a pan & roast the grated coconut and set aside.
- In a pressure cooker add the washed millet, dhal ,pinch of salt with 2 – 3 glasses of water & pressure cook for 4-5 whistles.
- Release the pressure.
- Give a good mix.
- Add the jaggery and give good mix ,allow it to cook till raw smell fades away.
- As it keeps cooking add ghee now and then.
- Add the cardamon powder ,grated coconut and give it to a good mix.
- Serve hot .
Note:-
- We can fry cashew ,raisins in ghee and add to the pongal.
- Any millet can be used.Any jaggery can be used for taste variation.
