Kachayyam : sweet and savoury

Kachayyam is a very traditional sweet and savoury which was made by my granny whenever there were guests at home. In those days there were not many snacks avaliable readily to buy on the stands ,and it was all home made. Kachayyam acted as quick fix to serve the guests.

Ingredients :

Sweet :

  • Broken wheat 1 cup
  • Jaggery ¾ – 1 cup ( to taste )
  • Coconut I cup
  • Cardamom powder ¼ tsp

Savoury :

  • Broken wheat 1 cup
  • Red chilly 2
  • Cumin ¼ tsp
  • Curry leaves a few
  • Asafoetida ¼ tsp ( optional )
  • Coriander leaves a handful ( optional )
  • Onions a few( optional )

Method :

Sweet :

  • Wash and soak the wheat for 1-2 hrs.
  • For the sweet grind all ingerdients expect jaggery without adding water to a coarse paste.
  • Because when you add the jaggery it will try to get watery.
  • When it is almost ground add jaggery ,give it one pulse and transfer it to a bowl.
  • Heat oil and fry it to golden brown.
  • Sometimes ,it can turn dark brown ,depending on the jaggery variety.
  • Serve hot.

Savoury :

  • Grind all the ingredients to a coarse paste ,if need be water can be sprinkled.
  • Transfer it to a bowl.
  • Deep fry to golden brown.
  • Serve hot.
