Mixed Vegetables with Mushrooms Gravy

This gravy with vegetables and mushroom is simply fantastic !!

The gram flour fried in ghee adds a beautiful texture and aroma ,hence it tastes delicious !!This is never fails to steal the hearts !!

Ingredients :

  • Onion 1 ( chopped )
  • Tomatoes 2( chopped )
  • Potato 1 (diced )
  • Carrot 1 ( diced )
  • Capsicum 1 ( sliced )
  • Mushroom 150 gms
  • Ginger garlic paste 1 tsp
  • Tomato ketchup 1 tsp
  • Red chilly powder ½ tsp ( to taste )
  • Turmeric ¼ tsp
  • Gram flour 2 tsp
  • Ghee 3 tsp
  • Coriander leaves to garnish

Method :

  • In a pan heat ghee ( 1 tsp ) and on low flame fry the gram flour ,till a nice aroma comes and set aside.
  • In another pan heat ghee and fry onions ,till it changes colour.
  • Add chopped tomatoes and fry till mushy.
  • Add ginger garlic paste and fry well.
  • Add chilly powder and toss.
  • Add water ( 1 tbsp ) ,salt , turmeric and mix well.
  • Add all the vegetables except capsicum along with ½ cup water ,mix well.
  • Close and cook till the vegetables are soft.
  • Now add the fried gram flour and mix well, let it cook till it blends well with vegetables.
  • Add capsicum and switch off the flame.
  • Garnish with coriander leaves .
  • Add a dash of tomato ketchup . ( optional )
  • Serve hot with rice /roti /dosa.
