Ridge Gourd Peel Chutney

The peel does’nt go for a waste,and is enriched with fibre which is highly nutritious. No one would guess its a peel of a vegetable that is so tasty.

Ingredients

  • Red chilly 3
  • Onion 1
  • Curry leaves a few
  • Tomato 1
  • Ridge gourd peel 1 cup
  • Puffed gram 1 tbsp
  • Coconut 2 tbsp
  • Tamarind a small piece ( optional )
  • Salt to taste

Method :

  • Heat oil add red chilly ,onions and fry well.
  • Add curry leaves ,tomato and fry till mushy.
  • Add the peel , salt and fry well till it is cooked.
  • Transfer it to a mixer jar , add puffed gram and coconut .
  • Blend it coarsely.
  • Tamper it with mustard , urad dhal ,curry leaves and red chilly.
  • Serve with rice ,doasa , idly.
