Sabudana Vegetable Uppama

Sabudana vegetable uppma is very healthy option for a meal .The goodness of veggies with sago / sabudana is light on the stomach and pocket .This is a sattvic option too . This can be eaten even on fasting days.

Ingredients :

  • Mustard ¼ tsp
  • Urad dhal ¼ tsp
  • Cumin ¼ tsp
  • Green chilly 4-5 ( slit )
  • Curry leaves a few
  • Ginger 1 tsp ( chopped )
  • Carrot 1 cup ( chopped )
  • Corn & peas 1 cup
  • Lime 1 ( juice )
  • Coriander leaves to garnish
  • Sabudana 150 gms ( soaked overnight )
  • Roasted groundnut 1 cup
  • Coconut 1 cup
  • Salt to taste
  • Oil 1 tbsp

Method :

  • In a pan heat oil throw in mustard ,urad dhal ,cumin ,allow it to splutter.
  • Add green chilly ,curry leaves and ginger ,toss well.
  • Add the vegetables ,salt ,give it a mix & close and cook.
  • When the vegetables get soft add sabudana ,salt and lime juice ,give it a mix ,close and cook .( 10 min approx. ,stir it on and off )
  • When the sabudna is cooked ,add ground nuts ,coconut coriander leaves and give it a mix.
  • Serve hot with coconut chutney .
