Sabudana vegetable uppma is very healthy option for a meal .The goodness of veggies with sago / sabudana is light on the stomach and pocket .This is a sattvic option too . This can be eaten even on fasting days.
Ingredients :
- Mustard ¼ tsp
- Urad dhal ¼ tsp
- Cumin ¼ tsp
- Green chilly 4-5 ( slit )
- Curry leaves a few
- Ginger 1 tsp ( chopped )
- Carrot 1 cup ( chopped )
- Corn & peas 1 cup
- Lime 1 ( juice )
- Coriander leaves to garnish
- Sabudana 150 gms ( soaked overnight )
- Roasted groundnut 1 cup
- Coconut 1 cup
- Salt to taste
- Oil 1 tbsp
Method :
- In a pan heat oil throw in mustard ,urad dhal ,cumin ,allow it to splutter.
- Add green chilly ,curry leaves and ginger ,toss well.
- Add the vegetables ,salt ,give it a mix & close and cook.
- When the vegetables get soft add sabudana ,salt and lime juice ,give it a mix ,close and cook .( 10 min approx. ,stir it on and off )
- When the sabudna is cooked ,add ground nuts ,coconut coriander leaves and give it a mix.
- Serve hot with coconut chutney .
