Highly flavor infused pongal ,makes one drool.
The saffron is the high light which leaves an awesome flavor . My mom would make it usually when we had guests for my kids birthday parties and this would definitely steal the show !!
Ingredients :
- Seerakasamba Rice 1 cup
- Milk 1 cup
- Coconut ½ cup
- Kalkandu 1 cup ( rock candy )
- Saffron few strands
- Hot milk 1 tbsp
- Ghee 4 – 5 tbsp ( to taste )
- Cardamom powder ¼ tsp
- Edible Camphor a pinch
Method :
- Dry roast the coconut till a nice aroma comes and set aside.
- Dry powder the kalkandu and set aside.
- In water milk add the saffron and set aside.
- In a cooker add water and milk ,to it add washed rice ,close and cook for 10 min .( or 3-4 whistles )
- When the pressure is released smash well.
- Add the powdered kalkandu and cook for a bit .Stirring it on and off.
- Add ghee as you stir.
- Now add saffron infused milk and mix well.
- Again add ghee , making sure the mixture does not stick to the bottom of the cooker .
- Add the roasted coconut.
- Keep stirring till the raw smell leaves.
- (The generous addition of ghee enhances the taste .)
- Switch off the flame.
- Add the cardamom powder and edible camphor and mix well.
- Serve hot.
Note :
- Basmathi rice or raw rice can also be used .For an enriched flavor basmathi or seerakasamba is recommended.
- Kalkandu otherwise known as diamond kalkandu or rock candy.
