Roasted Sweet Potato

Sweet Potato well known for its nutrional benefits and can be prepared in lot of varieties.

The taste is simply smooth & sweet which is a treat to the palate.

This dish is loved by all age group!!

It can be used with rice & chapati.

Ingredients :-

  • Sweet potato 150 gms ( cubed )
  • Coconut oil 1-11/2 tbsp
  • Turmeric powder ¼ tsp
  • Red chilly powder ½ -3/4 tsp ( to taste )
  • Curry leaves a few
  • Salt to taste

Method :-

  • In a kadai heat oil.
  • Toss in curry leaves & give it a toss.
  • Add the sweet potato ,salt, turmeric & chilly powder.
  • Toss it.Close with a lid and cook on slow flame ,stirring it on & off.
  • Stir gently making sure the cubes are not broken.
  • When it is soft ,fry well on slow flame till it turns crisp.

Note:-

  • Potatoes ,Yam ,raw banana also can be prepared in the same way.
