Drumstick Potato Brinjal Poriyal

Combination of vegetable Poriyal is a an awesome combination for white rice and Arsiparupu Sadham . This is very well known combination in the rural areas in and around Coimbatore. Drumstick being slightly thick vegetable is cooked first ,then the thinner brinjal and potato is added to get it cooked right.

Ingredients :

  • Drumstick 1 ( chopped )
  • Brinjal 4-5 ( chopped )
  • Potato 1 ( chopped )
  • Small Onion 4-5 ( chopped )
  • Mustard ¼ tsp
  • Urad dhal ¼ tsp
  • Curry leaves a few
  • Red chilly 1
  • Red chilly powder ½ tsp
  • Turmeric ¼ tsp
  • Oil 1 tbsp
  • Salt to taste
  • Coconut 2-3 tbsp

Method :

  • Heat oil throw in mustard ,as it splutters add urad dhal let it get brown.
  • Add the onions ,curry leaves and red chilly ,toss it.
  • Add drumstick , a little red chilly powder ,turmeric ,a little salt and water ,mix it ,close and cook.( 5-7 min)
  • Now add the brinjal and potato add rest of the chilly,salt and turmeric ,mix and close and cook.( 5 min)
  • When the veggies are soft and no water left ,add coconut and toss.
  • Serve hot with rice.
