Ridge gourd with peanut

The nut enriches the vegetable which results in a very flavorful residue.This dish alone can suffice one meal .

Ingredients :

  • Ridge gourd 200 gms ( chopped )
  • Curry leaves a few
  • Turmeric ¼ tsp
  • Mustard ¼ tsp
  • Urad dhal ¼ tsp
  • Salt to taste
  • Oil 1 tsp
  • Dry roast and grind to coarse paste :
  • Onions 1 (chopped)
  • Peanuts 1 tbsp
  • Red chilly 2
  • Coconut 1 -2 tbs

Method :

  • In a pan heat oil add mustard ,urad dhal ,as it turns brown add onions ,allow it to become transparent.
  • Now add the ridge gourd with ground paste ,water and salt.
  • Close with a lid and let it cook till soft.
  • Open he lid and fry for few minutes.
  • Serve hot with rice.
