Egg Paneer Bhurji is a very easy dish .
This was the favourite of our household when the kids were school going , also it would be one of the dishes in the lunch box menu. As it is made of minimalistic ingredients it can be made anytime in a giffy.
Ingredients :
- Paneer 1 cup
- Onion 1 ( chopped finely )
- Tomatoes 2 ( chopped finely )
- Green chilly 2 ( chopped finely )
- Ginger ¼ ‘ ( chopped finely )
- Garlic 2-3 pearls ( chopped finely )
- Eggs 2
- Salt to taste
- Oil 1 tbsp
- Coriander leaves to garnish
- Capsicum to garnish
Method :
- In a pan heat oil and throw in onions ,let it slightly change colour .
- Add ginger ,garlic and green chilly and toss.
- Add tomatoes and allow it to get mushy.
- Add salt to taste.
- Add in crumbled paneer and toss .
- Break in two eggs and mix well ,till all moisture is absorbed.
- Garnish with coriander leaves and capsicum.
- Serve hot with bread ,roti ,dosa.
