One of the famous concoctions which turns out to be the all time favourite and never fails to hold a place in the restaurant menu cards. Authentic spices are used for the delicious taste. The spices which never fails to take a seat in the pantry are only used ,hence makes it easy to cook .
Ingredients :
- Mutton 500 gms
- Curry leaves a few
- Small onions 10 ( chopped )
- Turmeric ¼ tsp
- Ghee 1 tsp
- Oil 11/2 tbsp ( to taste )
- Salt to taste
- Coriander leaves to garnish
Fry in oil & grind :
- Small onions 10- 15
- Red chilly 3-5 ( to taste )
- Cinnamon 2″
- Garlic 6-7
- Ginger 1″
- Cumin 1 tsp
- Coriander seeds 1 tbsp
- Castor oil 1 tsp
Method :
- In a pressure pan heat oil ,throw in onions and curry leaves ,fry till it is brown.
- Add the meat & fry till meat changes colour. ( so that the pieces don’t disintegrate )
- Add salt and turmeric and toss.
- Time to add the ground paste and give it a quick toss.
- Add water ( 1 – 2 cups ) and let it cook under pressure.( 10 min approx. )
- Allow the pressure to get released .
- Let it cook till raw smell leaves and oil separates.
- Drizzle ghee to enhance the taste.
- Garnish with coriander leaves.
- Serve hot with rice / bread / roti .
