Coconut Milk Kuzhambu is simply delicious ,creamy and rich. The Potatoes are cooked in spices and coconut milk has an enriched flavour .Second helping is a must .Also a heart stealer of the spread.

Ingredients :

  • Potatoes 2-3 ( cooked & smashed )
  • Onion 1 ( chopped )
  • Green chilly 2-3 ( to taste )
  • Red chilly 1
  • Coconut Milk 1 cup
  • Bay leaf 2
  • Cinnamon 1’
  • Ginger ¼ ‘
  • Garlic 2-3 pearls ( chopped )
  • Coconut Oil 11/2 tbsp
  • Salt to taste
  • Coriander leaves to garnish

Method :

  • In a pan heat oil ,throw in bay leaf and cinnamon ,let it splutter.
  • Add the green and red chillies.
  • Add the onion ,garlic and ginger ,toss it.
  • Add the potatoes ,salt and coconut milk ,give it a mix. Just before it starts boiling switch off the flame.
  • Garnish with coriander leaves.
  • Serve hot with appam ,bread ,doas ,idly,roti.
