Coconut Milk Kuzhambu is simply delicious ,creamy and rich. The Potatoes are cooked in spices and coconut milk has an enriched flavour .Second helping is a must .Also a heart stealer of the spread.
Ingredients :
- Potatoes 2-3 ( cooked & smashed )
- Onion 1 ( chopped )
- Green chilly 2-3 ( to taste )
- Red chilly 1
- Coconut Milk 1 cup
- Bay leaf 2
- Cinnamon 1’
- Ginger ¼ ‘
- Garlic 2-3 pearls ( chopped )
- Coconut Oil 11/2 tbsp
- Salt to taste
- Coriander leaves to garnish
Method :
- In a pan heat oil ,throw in bay leaf and cinnamon ,let it splutter.
- Add the green and red chillies.
- Add the onion ,garlic and ginger ,toss it.
- Add the potatoes ,salt and coconut milk ,give it a mix. Just before it starts boiling switch off the flame.
- Garnish with coriander leaves.
- Serve hot with appam ,bread ,doas ,idly,roti.
