Drooling Delicacy !!

Its a super delicious dish ,which is one of the favorite dish of my mom.

Ingredients :

  • Brinjal 2 ( egg plant )
  • Tamarind extract 3-4 tbs ( to taste )
  • Onions 1
  • Green chilly 2-3 ( to taste )
  • Turmeric ¼ tsp
  • Curry leaves a few
  • Coriander leaves to garnish
  • Oil 11/2 tbsp

Method :

  • Smear some oil on the brinjal.
  • Pierce a skewer at the rear edge of the brinjal and heat it on the flame ,let it become charged.Keep rotating the vegetable so that it is cooked on all sides.
  • When it reaches room temperature peel the skin , smash it well.
  • In a pan heat oil add mustard ,urad dhal ,allow it to splutter.
  • Add onions, green chilly ,curry leaves and toss it.
  • Add the tamarind extract ,turmeric and salt , let it boil and thicken a bit.
  • Now add the smashed brinjal with water to the required consistency and let it boil ,till raw smell leaves.
  • Garnish with coriander leaves.
  • Serve hot with idly / dosa / roti .
