Mutton with greens or spinach is a beautiful combination .This steals hearts of many.
The gravy is so creamy with the pureed spinach and the spices lifts the taste.
Ingredients :
- Mutton 500 gms
- Green chilly 5-6 (optional )
- Ginger garlic paste 1- 11/2 tsp
- Red chilly powder 1- 11/2 tsp
- Coriander powder 1tsp
- Spinach a bowl
- Onions 2 ( chopped )
- Tomatoes 2 ( chopped )
- Turmeric ¼ tsp
- Bay leaf 2
- Cardamom 2
- Cloves 2
- Cinnamon 2′
- Oil 1- 11/2 tsp
- Salt to taste
Method :
- Blanch the greens in boiling water . Set aside to cool and blend it to a smooth paste.
- Add the mutton marinated in turmeric to a cooker.
- Add the whole species , salt ,ginger garlic paste , green chilly ( optional ) and water, cook till meat is tender. ( approx. 7-8 whistles or 10 – 15 min ).
- In a pan heat oil add onions allow it to brown.
- Add tomatoes and allow it to turn mushy.
- Now add the cooked meat with red chilly powder ,coriander powder and let it simmer for 5 min.
- Now add the pureed greens and cook till raw smell leaves.
- Serve hot with rotis or rice.
