Drooling Delicacy !!
Its a super delicious dish ,which is one of the favorite dish of my mom.
Ingredients :
- Brinjal 2 ( egg plant )
- Tamarind extract 3-4 tbs ( to taste )
- Onions 1
- Green chilly 2-3 ( to taste )
- Turmeric ¼ tsp
- Curry leaves a few
- Coriander leaves to garnish
- Oil 11/2 tbsp
Method :
- Smear some oil on the brinjal.
- Pierce a skewer at the rear edge of the brinjal and heat it on the flame ,let it become charged.Keep rotating the vegetable so that it is cooked on all sides.
- When it reaches room temperature peel the skin , smash it well.
- In a pan heat oil add mustard ,urad dhal ,allow it to splutter.
- Add onions, green chilly ,curry leaves and toss it.
- Add the tamarind extract ,turmeric and salt , let it boil and thicken a bit.
- Now add the smashed brinjal with water to the required consistency and let it boil ,till raw smell leaves.
- Garnish with coriander leaves.
- Serve hot with idly / dosa / roti .
